Felicity’s Southwest Chipotle Chicken Salad

Ingredients
- 1/4 cup cider vinegar
- 2 tablespoons chipotle pepper in adobo sauce, chopped
- 1 tablespoon packed brown sugar
- 1 large boneless, skinless chicken breast half (8 ounces)
- 1 cup canned garbanzo beans, drained
- 1 pkg. DOLE® All Natural Southwest Salad Kit
- 3 medium tomatillos, husks removed and rinsed well
- 1 avocado, peeled and cubed
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Combine vinegar, chipotle peppers and brown sugar in small shallow baking dish, add chicken breast, turning to coat well. Bake 30 to 35 minutes or until lightly browned and no longer pink in center (165°F.). Cool enough to handle; dice or shred chicken.
- Stir together garbanzo beans and Taco Ranch Dressing from salad kit in small bowl, set aside.
- Combine salad blend, diced chicken, tomatillos, avocado and garbanzo mixture in large bowl; toss well. Divide salad mixture on 4 large plates. Sprinkle each with Cheddar cheese and tortilla strips, from salad kit. Top with cilantro and dollop of sour cream from salad kit (OR substitute low fat Greek yogurt).
